CARROT GINGER DRESSING

Servings:

8 3 oz servings

Ingredients:

2 cups fresh carrots chopped

½ cup pumpkin seeds – soaked & rinsed

2 Tbs fresh squeezed lemon juice

2 Tbs fresh squeezed lime juice

½ cup olive oil

3/4 cup water

2 Tbsp chopped date

1 Tbsp fresh chopped ginger or 1 tsp ginger

powder

1 Tbsp fresh chopped turmeric or 1 tsp..

turmeric powder

¼ tsp cayenne

1 clove garlic

1 tsp salt

 

Directions:

  1. In Vitamix Blender pulse all ingredients until blended but still slightly coarse.
  2. Enjoy on your favorite salad.
